Maximal SAMT activity is observed inmature flower buds i.e., 4 h before petal opening (4 p.m.). After petal opening, the level of activity of SAMT starts declining, and it is almost 78% less than the peak level. SAMT activity in petals again reaches to the second peak level after 8 h of petal opening
