Application

Application Comment Organism
nutrition production of controlled molecular weight isomaltooligosaccharides and oligodextrans from sucrose using the combined activity of a dextransucrase, EC 2.4.1.5, from Leuconostoc mesenteroides and endodextranase, EC 3.2.1.11, from Penicillium lilacinum. Higher substrate and dextranase concentrations give rise to products with lower molecular sizes and a dextransucrase/dextranase ratio of 1:1 or 1:2 appears to produce a polymer with a molecular weight which is desirable for prebiotic use Leuconostoc mesenteroides
