The enzyme specifically hydrolyses glucose from alpha-D-glucosyl-(1->2)-beta-D-galactosyl disaccharide units that are linked to hydroxylysine residues of collagen and collagen-like proteins. Acetylation of the epsilon-amino group of the glycosylated hydroxylysine abolishes activity.
